The first sight of the Cévennes onion sparked in Jason a passion for edible botanicals. And now its pliant luminous layers have become a metaphor for his own personal quest to always ‘peel away’ to new discoveries and breakthroughs.

Throughout his career and to satiate his curious mind and natural wanderlust, Jason travelled widely, eating and exploring the foods of the world. He combined these insights with his Asian roots and a deepening passion for botanicals to create Gastro-Botanica in 2014. Jason raised Gastro-Botanica to an exquisiteness that saw him lauded as the first and only Singaporean chef to receive both a ranking on Asia’s 50 Best Restaurants from 2016 to 2020, and one Michelin star from 2016 to 2019, during his tenure as Chef and Co-owner of the Corner House.
Served to dignitaries such as Singapore’s Prime Minister Lee Hsien Loong, China’s President Xi Jinping, the President of South Korea, the Prime Minister of Israel, the Sultan of Brunei and the Prince of Johor, Gastro-Botanica became synonymous with Jason as a trailblazing chef.
Intent on taking Gastro-Botanica further, Jason elevated its practices and principles, creating a cuisine that gave even more prominence and significance to botanical elements; and in the process stretching the limits of French gastronomy. Expanding beyond the initial opening menu, Deadfall II offers a comprehensive all-day dining menu with delicious, affordable and approachable dishes. Starting with snacks and bar bites under “Today’s Pickings”, highlights include the highly addictiveFive Dolla’ Slider (you guessed it, S$5++) with lamb merguez on a Deadfall bakery bun, dressed with Tzatziki and baby rocket, and the indulgent Spinach & Artichoke Dip (S$14++) with baby spinach, roasted artichoke and Cynar cream cheese. For heartier fare, options include original favourites such as the TTW Sando (S$17++) with a choice of smoked ham or beef pastrami served on a tater tot waffle with salsa roja, Chef’s sauerkraut and smokey cheddar and the House Nachos with a choice of chili con vegetarian “carne” or beef carne (S$12++ for small / S$25++ for family size), toppings and bottomless queso. The food menu also features new additions such as the 200g grass-fed Australian Ribeye (S$28++) served with chimichurri, andPoutine (S$12++), the Canadian dream with golden fries, smoked cheese curds and beef jus. The drinks menu has expanded to offer eight affordable, creative cocktails which stay true to the original colour-inspired concept, alongside a selection of classics from around the world (all cocktails at S$20++). For a more interactive experience, ask for the paper fortune teller menu, aka “The Click Clack”, which offers a fun way to choose your colourful cocktail based on your mood and desires. Cocktails are accompanied by the “Beer, Wine and Grog” menu offering a curated selection of wine and prosecco (all glasses S$16++, all bottles $60++), Billecart-Salmon Brut Champagne (S$100++ per bottle), ice-cold draft beer (S$6 / S$10 NETT) and canned beer and bottled cider (S$14++).
As the sun sets, the casual, open-air café and pub transforms into a more intimate, hidden away venue with one central entrance to facilitate safe check-in and contract tracing. Guests can enjoy table or bar seating for groups up to five, all with safe distancing measures in place.
Deadfall at Barbary Coast is now open from 3pm Monday through Friday, 4.30pm on Saturdays (still closing at 10:30pm due to government restrictions) with power points and free wi-fi to facilitate remote work during the day. In accordance with Singapore’s phase two reopening requirements, Deadfall will close at 10:30 p.m. nightly. Takeaway is available while kitchen is open, with dinner service from 4.30pm to close (Monday through Saturday), with lunch service from 12 noon to 2:30 p.m. (weekdays) and dinner service from 4:30 p.m. to close (Monday through Saturday). Delivery options are only available through Barbary Coast’s website from 3 – 10pm.
Barbary Coast Ballroom, located upstairs at the dual-concept venue, will follow with a reopening slated for August.

Qantas has officially opened its newest First Lounge, a luxury space spread over 1,000 sqm at Singapore’s Changi Airport.
The new First Lounge will operate in tandem alongside the airline’s existing International Business Lounge, providing capacity for 240 customers and a bespoke offering for Qantas’ First Class passengers and top tier frequent flyers.
The new build was designed by Australian designer David Caon in collaboration with Kelvin Ho of architecture and design firm Akin Atelie and features a number of Singaporean influences across the look and feel of the lounge as well as the food and beverage offering.
Qantas Group CEO Alan Joyce said the opening of the new lounge is a reflection of the airline’s extensive premium investment in the region.
“Since our A380 flights have returned to Singapore, we’ve seen an increase in demand for premium travel which has also translated to an increase in the number of travellers enjoying our lounge hospitality.
“This is our fourth Qantas First Lounge, and each time we build an entire new lounge facility from scratch, we speak to our frequent flyers to get a better understanding of how customers like to spend their time in the lounge and tailor it accordingly. Our customers told us their key priorities when travelling through or from Singapore is space to relax and do some last-minute work, a quick shower, and a meal before departure so they can maximise their sleep onboard.”

An open kitchen will serve up a Rockpool a la carte seasonal menu designed with Singapore’s vibrant dining culture in mind.
The lounge also features a cocktail bar with lounge seating, serving French champagne, seasonal spritzes, unique cocktails inspired by Singapore, like a Calamansi Mojito – made from the local Calamansi fruit, Singaporean and Australian beer – and a variety of Australian wine. Non-alcoholic healthy beverages such as kefir and kombucha, barley water and a Rockpool ‘House Lemonade’ are available, along with all day barista service with Vittoria coffee and a selection of savoury bar snacks and fruit.
Wellness continues to be a major inspiration and the new Qantas First Lounge brings the outside in. Live greenery features throughout the lounge to soften the space and bolster the atmosphere, while the use of natural materials and colour palettes is designed to help relax customers.
A unique faux ‘skylight’ in the shower suites and lounge area will replicate natural daylight and help adjust the body clock as customers transition through multiple time zones.
Business travellers have the choice to work in an open, communal setting or individual lounge chairs with high dividers. USB and charging ports are located throughout the lounge, with wireless printing, Wi-Fi and TV screens for customers to stay charged and connected.
The new premium space is Qantas’ fourth First Lounge across its global network, joining Sydney, Melbourne, and Los Angeles. The opening is part of the multi-million-dollar investment for customers on its Singapore services and complements the expanded Qantas International Business lounge at Changi, which combined now offers seating for more than 800 customers.

The 45-seater is helmed by Ebb and Flow Group Creative Director Norman Hartono and Operations Director Pio Subramaniam, who have spent a great amount of time finding a new location to house The Dragon Chamber. The Dragon Chamber was previously hidden within Lokkee at Plaza Singapura.

The Dragon Chamber is for diners who are looking for a culinary adventure at every turn. Dare to step into a restaurant that pushes the boundaries and traditions of Chinese cuisine. Overseeing the kitchen team is Chef Wong Meng Ooi. The 36 -year-old started his love affair with the culinary arts from an early age, and has over 20 years of experience under his belt.
Slated to open on 1st April at this new location, the “secret society” restaurant will offer access to a 32-seater kopitiam as well as a full-fledged 12-seater bar that opens till late. The kopitiam will serve breakfast and lunch, offering classics such as wanton mee, toast and the aromatic kopi.
A must-try from the kopitiam is the Singaporean classic wanton mee, which comes in two versions, dry or soup. Flavourful minced pork meat is wrapped within silky smooth dumpling skin before being poached to plumpness and served with springy thin noodles. To complete the dish, diners may choose to add on their noodles with char siew or roasted chicken.
Drawing inspiration from the multi-faceted flavours of Asia, the fresh and innovative bar is giving classic concoctions an Asian makeover. The intoxicatingly imaginative oriental cocktails served pay nostalgic homage to traditional ingredients used in Asian cooking such as tea, Chinese five spice and gula melaka. All syrups and infused liqueur are thoughtfully curated and made in house.

The golden sunlight that gilds the custom-built bar running almost the entire length of the space brings out yet another fact of 51 Soho. Drinkers will find their attention especially commandeered by the cocktails.
A beautiful list of classics, with a twist, is available but it’s the five 51 Soho Specials that will linger in the memory. Original recipes one and all, the Specials are nonetheless rooted in meticulous research and development. Resounding especially strongly was the history of punch drinks and shooters (or shots) – their celebratory nature; the flexibility of the basic recipes; and the stories – apocryphal or not! – that surround them. In fact, both Difford’s and Vice notes that historically, punch was the drink of choice for high society.
The 51 Soho Specials are a contemporary materialisation of cross-cultural references. Chinese rice wine, plum wine and bamboo wine form the base of the Specials. These, each with its own centuries-old heritage and character, have long since been lost to the serious drinker.

Hong Kong-based co-working outfit Campfire Collaborative Spaces announced that it has leased all 16 floors at 139 Cecil Street and is creating a multi-industry focused hub at this address.
The site is currently an 11-storey building undergoing major renovation to add five more floors, which Campfire said includes a roof terrace with an "industry-first sky pool, rooftop bar, outdoor dining area and cabanas" for members.
Upon completion in the third quarter of 2019, its 85,000 square feet of space will make it Campfire's largest site globally. Campfire was founded two and a half years ago, and now has 20 co-working sites across four countries occupying over 580,000 sq ft.

Taking into consideration how today’s employees, in particular, the millennial generation prefer to work, the firm undertook a four-month renovation of the KPMG Clubhouse, with the intent to redesign the facility such that it sits at the forefront of technology, functionality and design. Drinking pink has never been so trendy till recently. According to research company Nielsen on wine trends of 2018, consumers are adding rosé to their wine carts as an addition to other wine varieties. With increased production from France, Spain, Italy and the US, there’s never been a better time to try this exciting and tantalising wine.
Contrary to popular belief, rosé is NOT made blending red and white wine. There are several ways in which rose is made and that is not one of them. The most common rosé production method is the maceration of red grape varieties, skin still intact for between 12-24 hours to achieve the blush colour it is known for.

Ultra rare rosé champagnes such as Louis Roederer Cristal Rosé and 2007 Krug Rosé are available at $1,888 and $888 respectively. A regular glass of rosé starts at $12 per glass or $41 per bottle, magnum (1.5L) and jeroboam (3L) sized formats are also available at an affordable price.

The back of the restaurant is divided into 2 areas with table seating, one of which can be closed up to form a private room.

The new building, when completed in 2018, will offer a towering presence three times the height of its predecessor and is expected to contribute positively to the skyline of the Central Business District in Singapore. The new building shall have energy and water saving features aimed at achieving Green GoldPlus standards, thus reflecting Tuan Sing’s green and sustainability efforts. The Group expects a recurring income stream from the rental proceeds once the new building is completed.
