The same group that brought Miss Fitz Kitchen + Bar is excited to announce the launch of Roxy, a new cocktail bar concept in the heart of the Singapore CBD at The Sail at Marina Bay. Roxy is a glammed up but worn in cocktail bar and spirits room inspired by the back rooms and rock & roll nightclubs of 1970's Lower East Side Manhattan. This mischievous yet sophisticated lounge serves adult fun as a spirit-forward drinking den and tasting room with a vintage panache from décor bathed in a red-light hue and iconic images of NYC musicians, artists and socialites.
Found through an unmarked door at The Sail at Marina Bay or through the passageway in the back of Miss Fitz, this 20-seat hidden enclave immediately transports you back in time and across the world to the 1970’s in The Big Apple. Filled with the sounds of classic rock n roll, early glam bands, original punk rock and emerging disco of the era, you can’t help but feel that you are drinking alongside the legends that adorn the walls – whether having a Negroni with David Bowie or a Boilermaker with Keith Richards, the sights and sounds bring to life the grit and glamour of the era.

The cocktail menu combines the simplicity of spirit-forward, classic drinks typical of an old-world back room bar with a glamourous twist of 1970’s rock n roll across three distinct categories: signature cocktails, classic cocktail flights, and boilermakers (a beer and a shot combo). The concept and cocktail list were created in collaboration with Proof Creative, one of the worlds most awarded drinks consultancies.
Named for iconic nightclubs, songs of the era and classic beverages from the five boroughs, each signature cocktail (S$22+ - S$25+) brings a unique story of New York Americana to Singapore. Highlights include theCBGB Swizzle, a riff on the classic Mai Tai named for the Lower East Side Manhattan club known as the birthplace of punk music; You Don’t Have to Put on the Red Light, an amaro twist on the classic Negroni named for the Sting song and bar’s namesake “Roxanne”; the Jean Genie, a pear twist on a classic daquiri named for the David Bowie song that he called “a smorgasbord of imagined Americana”; and The New York Dolls Sour, a whiskey sour with American apple brandy named for the legendary 1970’s glam metal band.

In addition to the signature cocktails, Roxy offers cocktail flights (S$45+ - S$55+), each featuring three variations on a classic. Explore the different base spirits and speak with the staff on the evolution and history of the cocktails over time. The team is led by head bartender Tash Nayar, who brings 10 years of industry experience to his second concept launch as head bartender (previously at Miss Fitz).
The bar bites menu truly ties the New York to this Singapore location with the perfect pairing to any drink. The bites are variations on iconic New York foods that bring simple, yet playful forms of the food that defines New York. You can’t miss the Bagel Popcorn, popcorn tossed in the spices of an everything bagel; Pastrami Sandwich Bites mimicking the famous Katz Deli, or a Hot Dog With Diced Onions & Cheese found at any street corner push cart.

This dynamic individual has over five years of experience in F&B, specialising in bartending. Armed with an insatiable appetite for learning, his knowledge of spirits, cocktails and avant-garde techniques – including his own rendition of spiced Rum and infused Tequila – is impressive. He relishes the opportunity to showcase a cocktail programme that proudly embraces the culturally rich areas of Beach Road, Kampong Glam and Bugis that surround PARKROYAL on Beach Road.
“Creating the perfect cocktail is not just about mixing spirits. It is a journey filled with curiosity behind the story of what makes each drink one of a kind. As a bartender, the best feeling is seeing someone’s face light up when they try something new or when they have finally found the drink” shared Jun Han. “I love experimenting and incoporating local flavours as it adds a touch of home and gives deep meaning to each drink. Ultimately however, the flavours have to be balanced to give an all-round delightful experience.”
Jun Han was the 2019 Campari Bartender Champion, representing Singapore in Milan, where he emerged among the Top 14. Other achievements include second place at the 2019 Remy Martin Barrel-Aged Competition, Top 8 at the 2019 Black Cow Vodka Competition and Top 8 at the Bartender Society Saint James SEA Competition.

Porkypine's ham is cured and smoked in-house. A simple cure of salt and gula melaka is all they use, no nitrates or preservatives. After a 10-day cure, it is rubbed with Porkypine's secret rub and smoked with hickory for 8 hours. Their roast pork is made with pork shoulder marinated overnight and slow cooked for 24 hours with a special & secret spice blend.

Stewing during months of closure due to Singapore’s circuit breaker measures, Barbary Coast has reopened its downstairs venue, Deadfall, with new menus, new vibes and new hours.
Expanding beyond the initial opening menu, Deadfall II offers a comprehensive all-day dining menu with delicious, affordable and approachable dishes. Starting with snacks and bar bites under “Today’s Pickings”, highlights include the highly addictiveFive Dolla’ Slider (you guessed it, S$5++) with lamb merguez on a Deadfall bakery bun, dressed with Tzatziki and baby rocket, and the indulgent Spinach & Artichoke Dip (S$14++) with baby spinach, roasted artichoke and Cynar cream cheese. For heartier fare, options include original favourites such as the TTW Sando (S$17++) with a choice of smoked ham or beef pastrami served on a tater tot waffle with salsa roja, Chef’s sauerkraut and smokey cheddar and the House Nachos with a choice of chili con vegetarian “carne” or beef carne (S$12++ for small / S$25++ for family size), toppings and bottomless queso. The food menu also features new additions such as the 200g grass-fed Australian Ribeye (S$28++) served with chimichurri, andPoutine (S$12++), the Canadian dream with golden fries, smoked cheese curds and beef jus. The drinks menu has expanded to offer eight affordable, creative cocktails which stay true to the original colour-inspired concept, alongside a selection of classics from around the world (all cocktails at S$20++). For a more interactive experience, ask for the paper fortune teller menu, aka “The Click Clack”, which offers a fun way to choose your colourful cocktail based on your mood and desires. Cocktails are accompanied by the “Beer, Wine and Grog” menu offering a curated selection of wine and prosecco (all glasses S$16++, all bottles $60++), Billecart-Salmon Brut Champagne (S$100++ per bottle), ice-cold draft beer (S$6 / S$10 NETT) and canned beer and bottled cider (S$14++).
As the sun sets, the casual, open-air café and pub transforms into a more intimate, hidden away venue with one central entrance to facilitate safe check-in and contract tracing. Guests can enjoy table or bar seating for groups up to five, all with safe distancing measures in place.
Deadfall at Barbary Coast is now open from 3pm Monday through Friday, 4.30pm on Saturdays (still closing at 10:30pm due to government restrictions) with power points and free wi-fi to facilitate remote work during the day. In accordance with Singapore’s phase two reopening requirements, Deadfall will close at 10:30 p.m. nightly. Takeaway is available while kitchen is open, with dinner service from 4.30pm to close (Monday through Saturday), with lunch service from 12 noon to 2:30 p.m. (weekdays) and dinner service from 4:30 p.m. to close (Monday through Saturday). Delivery options are only available through Barbary Coast’s website from 3 – 10pm.
Barbary Coast Ballroom, located upstairs at the dual-concept venue, will follow with a reopening slated for August.

Neapolitans in particular have a cult-like devotion to fried fare, especially pizza fritta—fried pizza. After WWII, the city found itself in crisis, and the materials needed for pizza —mozzarella and even wood for the ovens—became a luxury. Fried pizza, a less-expensive alternative nicknamed “pizza of the people,” was filled with less expensive ingredients like pork crackling and ricotta. Housewives sold it on the streets to supplement the family’s income. Times were so hard that customers could even get pizza fritta on credit: called pizza-at-eight, “pizza a otto,” it was eaten on the spot but paid for eight days later.
Although finding this dish outside of Napoli is difficult, Bar Milano does it justice. Their specialty Pizza Fritta menu consists of options such as truffle smoked ricotta & wild mushrooms, mortadella & stracciatella, broccolini & anchovy and, of course a classic tomato mozzarella & basil.

A new cocktail bar has landed on Sago Street in Chinatown. Founded by 3 friends, Jay, Desiree & George, about 80% of the materials used to construct Sago House was recycled or up-cycled from unloved items.
Their drinks program features a weekly rotating menu of cocktails created from produce found in the locality along with some simple tasty bites.
They will also host regular hospitality workers education sessions, creating a safe space for industry to discuss issues that affect them, as well as sharing the process of building a venue independently.

Lumo is a new cocktail bar and restaurant unlike any other. Because its genesis is unlike any other, where Light is at the centre of its being: inspiring and driving it.
Light, a substance so banal yet ineffable, fills the 70-seat bar and restaurant in Boat Quay: suffusing it with its qualities, its values, its symbolism. ‘Lumo’ is a word in Esperanto, an artificial language, that means ‘light.’ Picking it for a name underscores one of LUMO’s defining principles – community – since Esperanto was created in 1887 as a means to unify peoples across the world through a universal lexicon.

Lumo comprises two distinct spaces – a bar and an open kitchen. A cool Scandinavian theme unifies the interior, featuring a muted palette and wood, leather and warm lighting to evoke a the feel of nicely furnished house party. Seating is informal and ‘democratic’ with high stools, counter seats, booths and dining settings inviting lots of social interaction. For instance, head over to the high tables set at a height of 95cm – ideal for both seated meals and for diners who prefer to stand and mingle. Each space also has its own ambience in sync with different playlists, underscoring the overarching message of Lumo – that any person can find his or her place on this earth, to exist and flourish under the same light.

The Modern European dishes of Head Chef Martin Wong and his team showcase key ingredients with finesse, and present them in a familiar and approachable manner. Just as light can both unify and contrast, dichotomies are explored in order to achieve a creative balance. For instance, a combination of wood-fire cooking and modern methods is applied. So are other traditional methods such as pickling, fermentation, ageing and brining, which are coupled with cutting edge technology such as Centrifuge and Thermomix to intensify flavours and achieve complexity.
The recipes are designed to complement the cocktails, with flavours supporting the drinks as diners progress from low-ABV to higher ABV’s as the night rolls along. And in line with Lumo’s inclusiveness, the cuisine is planned with an eye to dietary requirements and preferences.

Head Bartender Josiah Chee and his team eschew any fixed ‘style’, instead harmonising the Japanese and American approach to mixology to deliver a coherent experience that takes in social interaction, recommendations, showmanship and presentation. Concoctions stem from traditional recipes coupled with evolving trends, and are inspired by the things people eat and drink every day – the ‘fundamentals of life.’
The launch menu focuses on Breakfast, a daily staple. The cocktails are conceptualised around the prismatic nature of light, represented by 7 categories corresponding to the 7 constituent colours of natural light. Ranging from low to high ABV, each category is based on a study of ingredients – Brew, Milk, Fruit, ABC, ImpossibleTM Salad, Toast, Treat – distilled through culinary methods to be presented in their purest form.

Sharing plates at Sling features heart-warming recipes from Ethan's childhood, updated with modern cooking techniques. "My best memories come from watching my grandmother cook a giant tureen of curry to feed our family of 12. My dishes are a tribute to her while sharing Singaporean cuisine on an elevated level."
Straight from Ethan's grandmother's cookbook, the Turmeric Chicken ($28) contains juicy pieces of chicken fillet simmered in ginger, lemongrass and turmeric, to form a flavourful curry best paired with Nasi Biru ($3) – Japanese pearl rice with bluepea flower and lemongrass. Other mains include star dishes such as Babi Hitam ($39) and Rendang ($45).
A not-to-be-missed dish is the Kambing Bakar ($39) – a tender frenched rack of lamb marinated in local herbs and fresh pandan leaves, and Ikan Asam ($32) – a beautifully poached, then grilled salmon fillet in an ambrosial assam, tomato and onion sauce atop a bed of chickpeas. Here's a couple of the bar's cocktail creations:
Sariette – Imagine an aromatic blast of rosemary, thyme the moment you pick up this Islay led cocktail. A generous dram of Smokehead whirled around with Montenegro, Branca Mentha, Campari, Carpano Antica formula and Angostura Bitters is sublime.
Hyssop – if you’re craving a slightly bitter pour, look no further. The carefully calculated formula of this minty herb with high tannins with infused rum, St Germaine liqueor, Peychaud Bitters, pillow soft egg-white, a dash of lime juice and simple syrup – simply addictive.
Agastache – this thoughtful creation is a complex mix of this licorice, almost star anise flavoured herb, with beautifully distilled pisco. Add the slightly smokey Pierde Almas Mezcal, Aperol, whisked egg white, lemon juice, grapefruit bitters, sage syrup and you’ll reach new highs!

Kennedy International Airport, was at the heart of the action when the first commercial transatlantic flight took to the skies in the 1940s, heralding three decades of what we would come to know as the Golden Age of air travel as travellers set off to exotic lands in search of untold stories and new adventures.

Inspired by the decadence and romance of air travel’s resplendent years, Idlewild takes guests on a journey through the era’s greatest hits – popular travel destinations along the transatlantic route, music that defined that generation and the indulgence and luxury that underscored it all. Each element has been interpreted for a modern age from a stellar cocktail programme featuring modern craft spirits infused with influences from around the globe, to a live band playing postmodern tunes. Expect an eclectic mix of music from the late 1940s to 1960s from pulsing, rhythmic funk and soul to booming big band swing sounds and haunting, heart wrenching blues. Their cocktail programme was inspired by 10 cities along the popular Transatlantic Route – Dublin, Rome, Lima, Lisbon, New York, Casablanca, London, Paris, Mexico City and Havana. 20 signature cocktails (from S$20++ each) are artfully created using innovative and modern techniques and include a variety of artisanal spirits often sourced from small batch distilleries in each location, and rare vintages. Each location is also represented with a tapas-style bar snack (from S$15++) including Atun Chifa, Duck Rillette and Avocado Fries that draw inspiration from respective native cuisines.

“With Prohibition officially repealed, and recognizing that people hadn’t tasted a decent drink during the previous fourteen years of darkness, with the smell of Rhum always in my nostrils, I started to concoct some unusual, and at the time, exotic drinks”– Ernest Gantt (aka Tiki legend Don the Beachcomber).
Tiki is the manifestation of gracefully swaying palm trees, white-sand beaches and exotic visions of island cultured borrowed from tales told by American soldiers. These island dreams manifested themselves into some of the great themed bars of the 1920s and 1930s. The establishments exemplified the lure of the tropics providing a dramatic and inviting escape from the hustle and bustle of daily life.

Blueplate Studios by Wilson Associates has overseen the design, which has been inspired by the Pacific Ocean. The ATLAS Gin Collection will provide the world’s most diverse and thoughtfully curated physical compilation of this popular spirit. Assembled in an impressive ceiling-high tower, the display will form the centrepiece of the expansive venue. Appointed by Master of Gin, Jason Williams, the selection includes everything from 1910 London dry gins to the best of modern craft gins from the far corners of the world.
Beneath the bar lies a bespoke rose gold walk-in Champagne Room housing the ATLAS Champagne Collection. Guests are invited to taste the rare treasures from one of Asia’s most sought-after Champagne lists.

Housed within a 2-storey conservation shophouse, The Wall derives its name from the early 20th century brick walls on each side of the unit. Take a seat at their cosy 10-seater bar on the ground floor or climb the stairs to an intimate lounge decked out with plush leather chairs for more private conversations. They have an extensive cellar filled with exquisite wines and are also proud to showcase their extensive collection of rare whiskies that may be made available for consumption during special appreciation workshops.

Guests stepping into the bar are met with warm smiles and handed a full sumiyaki menu. ‘Novices’ less familiar with whisky can start with something they are more comfortable with --the food -- and then ease into the drink. Whisky is no longer just an after dinner enjoyment at The Wall, but paired with food to enhance the overall ‘spirit-ual’ adventure.

A new bar at Amoy Street, Native serves their signature Thai rum cocktail, Antz, with some crunchy ants. Vijay Mudaliar is the man behind Native and its creations which will raise some eyebrows.

The bar even uses lotus leaves for as drink coasters which are sustainable ware because when the coasters get wet, they would put the leaves back into the dehydrator to dry and then use them again. The steps will be repeated until the coasters can't be used anymore and they will then grate the coasters into powder to use as compost.
