This month, SPRMRKT joins a new neighbourhood – the verdant and idyllic Dempsey Hill, with an inspired space and a new cultural-culinary experience through dining, retail and art.
2012 saw the beginnings of the lifestyle F&B brand in a shophouse on McCallum Street favoured by city dwellers as an oasis to the hustle and bustle of CBD life. Eight years later, SPRMRKT has grown into a familiar neighbourhood name; from the bustling central business district to the riverside respite of Robertson Quay, quaint Cluny residential area, and now, at the heart of the Dempsey Hill lifestyle enclave.
Just like its name without the vowels, SPRMRKT is about simplicity, focusing on what matters. At the heart of it is responsibly sourced ingredients prepared meticulously to let their natural flavours shine; warm, friendly service centred on the diner; a showcase of carefully sourced gourmet brands from Singapore and around the region with the aim of giving back; and thoughtful collaborations that support young artists and creatives.

With Head Chef Marc Wee helming the kitchens of SPRMRKT, the all-new menus – first launching at SPRMRKT at Dempsey Hill, are thoughtful and produce-driven, highlighting vegetable-forward cuisine in the evening and café-style fare in the day. His creations start with the ingredients. The heightened necessity of sourcing and eating responsibly guides when and how he should use the freshest, quality produce picked at their best for the most flavour. Diversely prepared to bring out their intrinsic flavours, without compromising on taste.

The café-style menu has sumptuous offerings for the day, starting with breakfast and brunch items like the moreish Cheese on Toast, a wholemeal sandwich of cheddar and parmesan cheese with luscious truffle bechamel, and for something lighter, the House-made Granolatopped with seasonal fruits and honey yoghurt. A healthful yet satisfying meal that can be had on its own is the grain bowls with a choice from three variations – Tri-Coloured Quinoa, Black Barley and Aburi Salmon with organic Cambodian brown rice. Asian flavours add interest with the spicy sambal tomato option in the Prawn Pasta as well as a savoury coconut and green chilli sauce over a tender Chicken Confit. The signature Blackened Fish & Chips remains as a mainstay along with a juicy Wagyu Beef Burger. There are also vegetable-forward dishes that make delish snacks as with the Brussel Sprouts tossed with burnt corn, pomegranate, siracha mayo and sea salt, as well as the addictive Tofu Fries served with house-made garlic aioli.

Another reason to drop by SPRMRKT at Dempsey Hill is the house-baked goods fresh from the oven, enticing with their lingering aroma. The range varies daily and includes breads, pastries and tea cakes, as well as must-haves like the Olive Oil Cake and Chiffon Cake in flavours of lychee, strawberry and pandan.
Exclusive on the weekends, listen out for the ice cream man ringing the bell as SPRMRKT at Dempsey Hill brings a little nostalgia to the neighbourhood with the Durian Semifreddo Wafer Sandwich. The frozen semifreddo is house made with luscious D24 durian pulp cocooned in a crispy wafer with vanilla and caramel notes; great for on the go or at the breezy veranda.
