Coyote is the new contender to the few Modern Tex-Mex restaurants in Singapore’s F&B scene, promising heartier, more wholesome Tex-Mex cusine experienced in a semi-fine dining design.
Coyote will be helmed by Chef Jihardi Amin, well-known in the culinary scenes of Malaysia, Singapore and Thailand for more than 19 years, who has long-honed his expertise in both local and Western cuisine. His love for Mexican food was cultivated when he was mentored by two reknowned Mexican chefs: Chef Adrian Pinto and Chef Nacian Prince. Chef Jihardi found both familiarity and exotic flavour in Mexican colour, spice and aroma.
With combined similar minds, the opportunity to head a Tex Mex restaurant was kismet. The authentic menu to be delivered in Coyote reflects the humourous and jolly side of the Chef, as he abides to “respect and love the ingredients, and cook it with your heart and soul. The food will make rainbows in your eyes”.

Barrio by Mex Out makes its guacamole in-house every day using fresh avocado mashed and seasoned with lime, salt, and small amounts of red onions, jalapeno peppers, tomato and cilantro. Just the right amount of lime juice is added – key to ensuring the guacamole’s smooth texture and a slightly tangy taste. The tortilla chips too are fried and bagged in-house daily, guaranteeing that the chips are fresh, crispy, and utterly delicious.
Also made in-house daily are the salsas, using ingredients such as freshly diced tomatoes, red onions, cilantro, lime juice, salt and chillis. Some worth trying are the pico de gallo and the unique mango and pineapple salsa. And fresh-caught snapper is used in the ceviche and salad.
Many Mex Out favourites are on the menu, including the burrito wraps, burrito rice bowls, tacos and salads. The restaurant offers plated dishes, starters, bar snacks, tortas, and desserts such as the Chocolate and Chilli Brownie, for sharing. There are vegetarian options and a breakfast menu that’s available until 3pm everyday.
Apart from refreshed decor, the culinary team brings to the table a range of delectable Mexican-style dishes. Try the Tortilla Salad with Lime Dressing, a fresh tortilla salad with everyone’s favourite Mexican condiments like jalapeno and refried beans, or go for Mexican staples, the Chicken Enchiladas and Pulled Beef Enchiladas, both served with cheese in tortilla wraps.
FIX’s naanwich fans will be thrilled with naanwiches “re-born” in the form of Mexican Fajitas. Bringing back well-loved naanwich favourites like Chicken Achar Fajitas, and Beef Kimchi Fajitas, featuring grilled beef served on a hot plate with kimchi, a sous-vide egg and side condiments of tortilla, guacamole and a unique tomato salsa with chinchalok, these Mexican Fajitas take on a new lease of life and are bound to win hearts.
FIX will also serve up Mexican dishes in hearty portions like Chicken Pascal, a slow-cooked chicken leg in chipotle tomato sauce, Steak & Potatoes, a 200g flank steak, and a delicious tender Lamb Shank featuring braised lamb shank in mole sauce and toasted almonds.
For desserts, go for the addictive Bunuelos & Ice- cream, a crispy tortilla glazed in sticky Gula Melaka, served with vanilla ice-cream.
