Pasta Bar on Keong Saik Road is an intimate Italian & pasta restaurant by Chef Alessandro Guistetti.
Nothing is more Italian or more satisfactory to eat than a bowl of pasta. Known across Italy as “piatto unico” or “a complete meal” pasta has become a symbol of the Italian way of life – a symbol of family and friends gathering around the table to share, laugh, eat and create memories. At its simplest, pasta is a basic combination of flour and water but in reality, it is much more than that. Pasta and pasta making are deeply rooted in history, tradition and regionality and the recipes and techniques to make pasta vary from city to city, town to town, family to family.
Drawing on the traditions and techniques of his ancestors, Chef Alessandro draws on family recipes, handed down through the generations, to bring you dishes that reflect the regionality and diversity of Italy. Each and every one of their pasta shapes is handmade daily using a variety of semolina and ‘00’ flours combined with whole egg, egg yolks and water or a varying combination of these ingredients depending on the required texture, bite and intended use of the pasta, providing a different eating experience with every dish.
Marcelo Burlon is the creative mastermind behind Milan-based fashion label Marcelo Burlon Country of Milan The brand takes inspiration from the Patagonia region and '90s club culture.
A cultural wanderer, jack of many trades and all-around mover ‘n shaker, Marcelo Burlon epitomizes a defining quality of modernity: he is, metaphorically speaking, liquid. Officially based in Milan but actually spending most of his time on planes, Marcelo trots around the globe as a much sought-after party organizer, DJ, creative director, photographer, nightlife wizard and much more. Just as he ignores geographical borders, Marcelo’s ebullient creativity keeps pushing boundaries. His oeuvre is an endlessly morphing monument to the power of contamination. And it really comes as no surprise for this wunderkind, who arrived in Italy from Patagonia and took over fashionable Milan, before setting off to conquer the whole world. Wherever he goes and whatever he does, Marcelo leaves a mark. He truly acts as the catalyst, liberating positive force of the situation. That is why everybody, from revered fashion houses to powerful brands, entrust their parties, show soundtracks and everything social in his capable hands.
Marcelo’s unique network keeps growing and growing, attracting la crème de la crème of who’s cool. That’s just his signature touch – gathering people together is his talent and creative medium par excellence. Knowing too well that one has to think local but act global, Marcelo Burlon operates under the moniker County of Milan: a multi-culti blender of fashion, music, nightlife, extreme beauty and now a complete clothing line – which has created a global phenomenon. Drawing in iconographic elements from different cultures, Marcelo creates his very own symbology and celebrates diversity. That’s exactly what he does with everything he touches, morphs, and invents. Be it a tee or a soundmix, the perfect party or artistic direction for a fashion show, the terms of the equation are just the same: it’s the vision and method that count. A pure expression of the moment, Marcelo celebrates the liberating, exhilarating joys of contamination. He is the great officiator of a thrillingly contemporary melting pot.

Guccio, representing the surname – and hence, the origins of Chef Marco - will offer Executive Chef Marco Guccio’s culinary philosophy: an Italian fine dining cuisine journey, from a home-made, hearty cuisine to a global fine dining success.
While using top ingredients is not unique per se, Marco’s signature cooking style is: in his cuisine, the core ingredient becomes the main actor in the opera. Each dish has one ingredient at the center of the flavor experience. While the presentations are at times a contrast of colorful and complex textures, Marco’s dishes create a balance of supporting flavors, similar to how supporting artists dance in harmony, in the background of the leading act.
This philosophy is pushed to its boundaries at Guccio, with critics sometimes claiming that a blindfolded customer would always be able to recognize the chief ingredients in the dish she is eating. This style won chef Marco a Bib Gourmand from the prestigious Michelin Star Guide for two years in a row, in 2016 and 2017.
Chef Marco welcomes you to his restaurant. Its décor is, once again, balanced and aims to be comfortable, while remaining in the background. At Guccio, customers will be at the center of the experience, with the colors and design elements to balance the surroundings.
In the background of Marco’s main culinary signature style, Guccio will further differentiate itself by taking its diners onto a seasonal journey across the various regions of Italy, their fertile lands and their precious seas. At regular intervals, aligned with the four seasons of Europe, chef Marco will explore regional ingredients and recipes associated to each season, a unique opportunity to visit Italy even when 10,000 km away from it.
Marco’s creation will be paired by the best Italian wine labels available. As for the culinary ingredients, Guccio will not focus so much on education about new ingredients or unknow brands, but on outright enjoyment of the best that Italy has to offer.

Acqua E Farina's co-founders and executive chefs, Roberto Galbiati and Antonio Manetto, bring their warm smiles and tried-and-tested recipes from their hometowns to their newly opened Italian restaurant at The Rail Mall.
The pizzas are mainly Neapolitan-style with a small section for Sicilian-style barca or boat pizzas, perhaps not surprising as they are under the charge of chef Antonio who was born and bred in a small town near Naples and who grew up eating the pizza he later trained to make.
Pastas at Acqua e Farina are an exploration of the different gastronomic expressions of North and South Italy. For example, the Linguine ai Frutti di Mare is a very typical Southern-style seafood pasta: the tomato base is gently simmered with seafood such as prawns and squid so that it takes on the flavours of the sea while retaining the tangy fruitiness of the tomatoes. The Spaghetti al Nero di Seppia takes a very different approach. It is a typical Northern-style seafood pasta which looks rich and almost intimidating on the plate but draws out hearty flavours that feels almost earthy if it weren’t for the scent of the ocean that lingers on the palate.
