City Developments Limited (CDL), CapitaLand Limited (CapitaLand) and Ascott Residence Trust (Ascott Reit) have teamed up to redevelop the Liang Court into an integrated development following the proposed sale by CDL Hospitality Trusts (CDLHT) of its total interest in Novotel Singapore Clarke Quay, subject to the approval of CDLHT’s unitholders at its extraordinary general meetings, to the 50:50 CDL-CapitaLand joint venture entities and CDL. Concurrently, Ascott Reit will sell part of its interest in Somerset Liang Court Singapore2 to CDL.
Subject to approval from the relevant authorities, the proposed integrated development with a total gross floor area of 100,263 sqm will comprise two residential towers offering around 700 apartment units, a commercial component, a hotel and a serviced residence with a hotel licence. Upon completion, the 50:50 CDL-CapitaLand joint venture entities will own the residential and commercial components while Ascott Reit will own the 192-unit serviced residence with a hotel licence. CDLHT will own the hotel, which will have about 460 to 475 rooms4, under a forward purchase agreement with CDL5. The hotel will be operated under the Moxy brand by Marriott International while the serviced residence will retain its Somerset branding. The new venture promotes thoughtful living by challenging food norms that bring about unnecessary food wastage. Derived from the word “cosmos” – a system of thought, Kausmo is the brainchild of co-founders Lisa Tang, 24, and Kuah Chew Shian, 26.
Lisa, nominee for the Rising Female Chef award at the World Gourmet Summit 2019 and runner-up for the 2014 Les Amis Awards Culinary Competition, graduated from the Culinary Institute of America. It was her time in Primo, a restaurant on a farm that actively engages in zero-waste practices, that inspired her to start a thoughtful business back home. With Kausmo, Lisa hopes to creatively repurpose aesthetically filtered fruits and vegetables that are overstocked, over-ripened, and oddly-shaped and sized.
“Retailers are looking for produce that are of uniform shape and size, but nature doesn’t workthat way. We want to show that ingredients not ideal for retail can be perfect on our plates. AtKausmo, we celebrate imperfections,” shares Chew Shian, restaurant manager.
Every dish created at Kausmo incorporates thoughtfully sourced ingredients; seafood from small farming communities in the region, secondary cuts of meat which are often overlooked in favour of prime cuts, as well as forgotten native greens and florals.
Combining European techniques with Asian influences, Lisa, who has worked at Pollen, Jaan, and Les Amis, demonstrates how lesser-loved ingredients are no less delicious than their popular counterparts.
Kausmo will offer a 6-course Carte Blanche menu at $75++, with Kombucha tasting at an additional $20. Diners can expect flavourful dishes inspired by stories, as the team behind Kausmo takes supply volatility in their stride.
“We’ve learnt to embrace the volatility of our ingredients, because Mother Nature is just as beautifully unpredictable! Much more operational planning and preservation of produce has to be in place to better utilise our ingredients – a challenge that we willingly welcome. In a city known to be able to source almost anything at any time, perhaps it’s time to slow down; better appreciate and understand our food sources & produce,” comments Lisa.

Uya Singapore at Wheelock Place is a 90-seater restaurant which specialises in grilled live unagi (freshwater eels). It’s opened by the people behind Koji restaurant at Pickering Street, which is known for its chirashi don.
Uya is a local collaboration with an experienced unagi distributor from Nagoya, Japan.
The eels are sourced from both Japan & Taiwan and transported live to Singapore, where they are prepared daily in the restaurant and grilled over binchotan charcoal.
There is a glass panel at the front of the restaurant where you can watch the chefs in action.

Hong Kong's Michelin-starred Kam's Roast will open at Pacific Plaza on Nov 19 at 1pm, even if its without their signature goose on the menu.
This is the brand's first overseas outlet. In Hong Kong, Kam's Roast Goose earned its Michelin star within four months of opening in 2014. It was started by Mr Hardy Kam, a grandson of the late Mr Kam Shui Fai, who founded the Hong Kong roast goose institution Yung Kee in 1942. In replacement of their signature Roast Goose which they are unable to serve in Singapore at current, they will have succulent Roast Duck instead.

Kakure is the new arrival at the Scotts 29 lifestyle enclave and will appeal to fans of sake. The sake list (arguably the largest in Singapore, with over 50 labels) is the love child of in-house sake sommeliers John and Makoto along with Ki-Sho's head chef Kazuhiro Hamamoto.
