DFS Group, the world’s leading luxury travel retailer, has opened a spectacular new wines and spirits flagship duplex store – the first of its kind in the world – at Singapore’s Changi Airport Terminal 3 .
At 11,400 square feet across two floors, the store is DFS Group’s largest single retail space for wines, spirits and tobacco. The opening of the store marks a milestone in DFS’ leadership and innovation in retail, and the realization of a new vision for retail at Changi Airport.
Designed by Masamichi Katayama, the award-winning interior designer and founder of design firm Wonderwall, the store showcases the luxury retailer’s full assortment of wines, spirits and tobacco in a visually dramatic store environment and façade inspired by flowing water and undulating shapes. Within the store, warm and modern design elements accentuated by a double-height atrium measuring over eight meters high provides an inviting shopping and tasting environment for travellers.
Amongst the store’s most innovative features are expanded common areas designed especially for lifestyle and cultural experiences. This includes a Raffles Long Bar – in collaboration with one of Singapore’s most historical landmarks, the Raffles Hotel - the ground-floor atrium tasting bars and a private lounge. The Long Bar will serve its famed cocktail invention, the original Singapore Sling. In Italian, the word ‘PerBacco’ refers to Bacchus, the god of wine and good times and is also used as an expression of pleasure and surprise. It is, indeed, an apt name for an establishment that prides itself on offering an authentic, top-notch Italian bar and dining experience.
The long, spacious bar overlooks the charming street and offers an al fresco feel thanks to high chairs and tables arranged right by its large windows. Here, amid brick-lined walls and dark wood furnishings, Chef Marco offers an impressive range of whiskeys, rums, unpasteurised beers, Italian wines and other spirits, and a list of six classic cocktails including the Manhattan, Negroni, and Spritz. The cocktails are always made to perfection with premium spirits such as Fords London Dry Gin, High West Rye Whiskey and Bottega Gold Prosecco.
To accompany the drinks is a list of premium Ciccheti (Italian bar bites to share) that Chef Marco imports from Italy and stores in a beautiful cold room that forms part of the restaurant’s décor. There are cold cuts like Parma ham aged between 12, 24 and 36 months; mild and sweet small-batch salamenostrano; pure pork salame from Felino, a small town located in the Baganza valley; unctuous salame Milano; and soppressata, a dry salami native to Tuscany and Liguria. These are cut using a beautiful, traditional Tamagnini ham hand slicer brought in from Parma, Italy.
On the menu are refined classics from the Mediterranean, including Chef Marco’s signature homemade spaghetti chitarre (guitar spaghetti, in reference to the guitar-like tool used to make the noodles) with scampi and clay pot fregola (pasta made from semolina, similar to Israeli couscous) with fresh lobster.
Chef Marco makes it a point to import the finest ingredients from around the world, including beef from Kobe, Japan and lamb from New Zealand, which he cooks to deft perfection in his mixed grill. He also brings in seasonal vegetable, fruit and seafood such as mussels and clams from Italy twice weekly.

The legendary steakhouse, Morton’s, has unveiled a refreshed and contemporary new look following a 3 month renovation.
16 years since the restaurant first opened its doors in Singapore, the time-honoured main dining room, three private dining rooms and Bar 12.21, have all been transformed to reveal a fresh, bright and contemporary space, which exudes sophistication.
The restaurant façade now features French windows which offer an inviting glimpse of the revamp through Bar 12.21 and on to the main dining room beyond. With its lighted bottle display and contemporary chandelier light feature, the chic bar makes an ideal place to rendezvous for aperitifs of signature MORtinis or sample a selection of over 60 whiskies, bourbon and premium spirits.
Over in the main dining room, the use of crisp white paint on the walls is elegantly contrasted against the use of dark wood accents seen in the cornices, window frames and the screen panel features. This is offset by the accents of warm colour tones in the vaulted ceilings; gold in the main dining room and pale blue in the private dining rooms, as well as the use of various textures throughout, such as the brickwork effect stone tiles which frames the showcase kitchen. With a distinct Art Deco feel to the overall design, the restaurant now benefits from a real sense of space - the accumulative result of the removal of the partition between Bar 12.21 and the main dining room; the new wall-to-wall windows that stretch the length of the main dining room; the creative use of mirrors and clean contrasting colour palate, all beneath the warm glow of the bright sparkling chandeliers.
The three private dining rooms, each space unique, follow the clean and contemporary look, and feature distinct pale-blue vaulted ceiling with a cloud mural. New cutlery and glassware completes the overall redesign, not to mention the cherished pig-shaped tabletop oil lamps which have been lovingly restored, and now utilise eco-friendly tealight effect lights.
Oenophiles are sure to delight with the introduction of 52 wine lockers, where you can keep bottles of their favourite vintages, or alternatively, choose from the extensive wine list - many of the bottles which now grace the new showcase wine wall.
