At 11,400 square feet across two floors, the store is DFS Group’s largest single retail space for wines, spirits and tobacco. The opening of the store marks a milestone in DFS’ leadership and innovation in retail, and the realization of a new vision for retail at Changi Airport.
Designed by Masamichi Katayama, the award-winning interior designer and founder of design firm Wonderwall, the store showcases the luxury retailer’s full assortment of wines, spirits and tobacco in a visually dramatic store environment and façade inspired by flowing water and undulating shapes. Within the store, warm and modern design elements accentuated by a double-height atrium measuring over eight meters high provides an inviting shopping and tasting environment for travellers.
Amongst the store’s most innovative features are expanded common areas designed especially for lifestyle and cultural experiences. This includes a Raffles Long Bar – in collaboration with one of Singapore’s most historical landmarks, the Raffles Hotel - the ground-floor atrium tasting bars and a private lounge. The Long Bar will serve its famed cocktail invention, the original Singapore Sling. These common areas also provide space for guided tastings and a monthly program of exciting and interactive activities, featuring master classes for cocktail mixology, bartending and hosting at home.
In the new duplex store, DFS also introduces Changi’s first branded boutiques for wines and spirits, situated on the second floor. Inspired by the craft beer and fresh seafood culture of San Diego, Draft & Craft is a unique restaurant-bar concept that serves authentic Southern Californian comfort food and specializes in craft beer, unique cocktails and artisanal cheeses.
Draft & Craft was conceptualized and founded by a couple that moved here from San Diego, who wanted to bring the freshness and easiness of Baja-influenced So-Cal dining to Singapore. The essence of So-Cal dining is fresh ingredients and is usually accompanied with a craft beer or cocktail in a casual, breezy setting. “Draft” refers to the draft gourmet beers on tap, and “Craft” refers to the craft food, cocktails and artisanal cheeses offered.
Draft & Craft serves up “Baja-style” Mexican food, which is a popular staple in Southern California because of its emphasis on fresh produce and seafood with it being typically lighter on the stomach when compared to traditional Mexican fare. Their food is mostly made from scratch, with a few components carefully sourced and selected by their chef. Highlights of the menu include epicurean versions of grilled cheese sandwiches and tacos such as the Baja Fish which consists of beer-battered and fried fish fillet, pico de gallo, fresh shredded cabbage and homemade white sauce enveloped in a warm and soft flour tortilla. In addition, Draft & Craft hopes to introduce the concept of beer and cheese pairings. The effervescence and varying flavors of different beers serves to complement a wide selection of cheeses as they bring out the subtle notes in one another. The gourmet cheese-tasting platter, as well as individual cheese wedges offered on the menu as supplemental beer pairings, were handpicked by their cheese consultant, who owns several cheese bars in Portland, Oregon.
Driven by his passion in craft beer, their beers are lovingly curated by the owner who is a beer connoisseur and home-brewer himself. Some of the offerings on tap include Stone IPA, Rogue Dead Guy Ale, Prairie Saison, and Anderson Valley Summer Solstice. The latest, salubrious addition to the Craig Road stretch is PerBacco — an elegant Italian wine bar and restaurant helmed by chef-owner Marco Violano. In Italian, the word ‘PerBacco’ refers to Bacchus, the god of wine and good times and is also used as an expression of pleasure and surprise. It is, indeed, an apt name for an establishment that prides itself on offering an authentic, top-notch Italian bar and dining experience.
The long, spacious bar overlooks the charming street and offers an al fresco feel thanks to high chairs and tables arranged right by its large windows. Here, amid brick-lined walls and dark wood furnishings, Chef Marco offers an impressive range of whiskeys, rums, unpasteurised beers, Italian wines and other spirits, and a list of six classic cocktails including the Manhattan, Negroni, and Spritz. The cocktails are always made to perfection with premium spirits such as Fords London Dry Gin, High West Rye Whiskey and Bottega Gold Prosecco.
To accompany the drinks is a list of premium Ciccheti (Italian bar bites to share) that Chef Marco imports from Italy and stores in a beautiful cold room that forms part of the restaurant’s décor. There are cold cuts like Parma ham aged between 12, 24 and 36 months; mild and sweet small-batch salamenostrano; pure pork salame from Felino, a small town located in the Baganza valley; unctuous salame Milano; and soppressata, a dry salami native to Tuscany and Liguria. These are cut using a beautiful, traditional Tamagnini ham hand slicer brought in from Parma, Italy.
On the menu are refined classics from the Mediterranean, including Chef Marco’s signature homemade spaghetti chitarre (guitar spaghetti, in reference to the guitar-like tool used to make the noodles) with scampi and clay pot fregola (pasta made from semolina, similar to Israeli couscous) with fresh lobster.
Chef Marco makes it a point to import the finest ingredients from around the world, including beef from Kobe, Japan and lamb from New Zealand, which he cooks to deft perfection in his mixed grill. He also brings in seasonal vegetable, fruit and seafood such as mussels and clams from Italy twice weekly.

The new menu draws inspiration from far and wide throughout Asia, Latin America and Europe and has been streamlined to offer a focused selection of key dishes created in a collaborative effort between Chef Daniele and Chef-owner Ryan Clift of Tippling Club.
The new dishes are surprising yet familiar, boasting a higher level of complexity with more premium-quality ingredients, innovative and well-layered flavour profiles, and interesting presentations — while staying true to the modern bistro’s style of fusion European, Western and Asian flavours.
Standout items within the menu include the Kale Broth, a healthy starter poured table-side over crispy kale, smoked quail eggs and extra virgin olive oil “caviar”; Guacamole Risotto, with fresh chilli, slow-boiled hen egg and crème fraîche borrows its flavours and cheeky tortilla chip garnish from Latin America; a lean cut of Australian Kangaroo Fillet served agrodolce-style in a vinegar jus and accompanied with roasted Brussels sprouts with pine nuts and baby onions, and sautéed warrigal greens. Regulars will be pleased to find that the menu also features a number of amped up bistro classics, such as the quintessential Braised Beef Cheek is slow-cooked for 48 hours then served with velvety black truffle mash, roasted mushrooms and rich red wine jus.

Upon entering Sum Yi Tai, patrons will be transported back to 1980s Hong Kong. The bar has a distinct gangland vibe reminiscent of old Hong Kong gangster movies. The first thing patrons will notice is a black Chinese dragon hanging from the ceiling, ever watchful, ever vigilant. Along the wall at the entrance of the Chinese Tapas Bar is a mosaic artwork made up of hundreds of wooden mahjong tiles, while further in, a CD wall waits, featuring the albums of many popular 1980s Canto-pop artistes. The general feel of the Chinese Tapas Bar is comfortable, friendly and familiar.
The Private Rooftop Bar presents a different atmosphere. The legendary steakhouse, Morton’s, has unveiled a refreshed and contemporary new look following a 3 month renovation.
16 years since the restaurant first opened its doors in Singapore, the time-honoured main dining room, three private dining rooms and Bar 12.21, have all been transformed to reveal a fresh, bright and contemporary space, which exudes sophistication.
The restaurant façade now features French windows which offer an inviting glimpse of the revamp through Bar 12.21 and on to the main dining room beyond. With its lighted bottle display and contemporary chandelier light feature, the chic bar makes an ideal place to rendezvous for aperitifs of signature MORtinis or sample a selection of over 60 whiskies, bourbon and premium spirits.
Over in the main dining room, the use of crisp white paint on the walls is elegantly contrasted against the use of dark wood accents seen in the cornices, window frames and the screen panel features. This is offset by the accents of warm colour tones in the vaulted ceilings; gold in the main dining room and pale blue in the private dining rooms, as well as the use of various textures throughout, such as the brickwork effect stone tiles which frames the showcase kitchen. With a distinct Art Deco feel to the overall design, the restaurant now benefits from a real sense of space - the accumulative result of the removal of the partition between Bar 12.21 and the main dining room; the new wall-to-wall windows that stretch the length of the main dining room; the creative use of mirrors and clean contrasting colour palate, all beneath the warm glow of the bright sparkling chandeliers.
The three private dining rooms, each space unique, follow the clean and contemporary look, and feature distinct pale-blue vaulted ceiling with a cloud mural. New cutlery and glassware completes the overall redesign, not to mention the cherished pig-shaped tabletop oil lamps which have been lovingly restored, and now utilise eco-friendly tealight effect lights.
Oenophiles are sure to delight with the introduction of 52 wine lockers, where you can keep bottles of their favourite vintages, or alternatively, choose from the extensive wine list - many of the bottles which now grace the new showcase wine wall.
