When summer descends on Italy, the outdoors burst with activity and the word on everyone’s lips is “grigliata”.
Grigliata is the outdoor grill cook-out dreamed of in foodie heaven. A larder of the season’s finest produce sizzling on a bed of burning charcoal. The company of family and friends. Luscious wine and overwhelming hospitality.
The Italians have honed this summer ritual to perfection, and adored and honoured it like religion for generations. Now imagine sitting down to this cornucopia of flavour and life ... and you are at Griglia Open Fire Italian Kitchen.
Griglia is a brand-new contemporary Italian grill restaurant nestled on the ground floor of a conservation shophouse in charming Craig Road. As its name promises, diners at Griglia will be treated to the tastes, sensations and emotions of the grigliata in a casual setting-- and fall in love with the magic of the Common Flame.
Typically, guests bring along their favourite dishes to a grigliata. Multiple courses are enjoyed over a long afternoon, leisurely savouring appetisers and side dishes while sipping tasty wines, before embarking on the main course; meanwhile the charcoal fire perpetually glows in one of the oldest cooking styles known to man.
The grigliata celebrates fresh seasonal produce, cooking it over hot coals and open flame to accentuate the natural inherent flavours. Grigliata dishes are less intense and more Mediterranean in flavour, consisting of meats, seafood, fish and seasonal vegetables and fruits seasoned with herbs, salt and pepper, lavished with olive oil marinades and judicious squeezes of lemon.
Griglia prepares these same recipes using traditional as well as modern methods, making them even lighter and more refreshing. The menu conceptualised by Andrea De Paola, Chef Partner of Griglia & Group Executive Chef of Food Concepts Group, is based on classic grigliata dishes from different regions of Italy with additional recipes from his family and friends. By offering a wide selection of food, and serving it smaller sharing portions, diners are encouraged to order and taste many dishes in the style of the ‘bring-your-own’ grigliata.
At Griglia almost all the ingredients, and not just meat, fish and seafood, are cooked with the cast iron charcoal grill. This stunning equipment, made-to- measure for the open kitchen, brings out the intrinsic flavours of the fresh seasonal produce. Meanwhile the warm and cosy restaurant is constructed and clad in the raw materials of the grigliata – wood, bricks and metal.
Food and aesthetics work together to honour the element at the crux of the grigliata and the restaurant -- the Common Flame that draws people together in the embrace of Italian hospitality; fostering human bonds over food and fire, and creating moments that beget enduring memories.
The menu is conceptualised by Chef Andrea De Paola, and executed by Head Chef Federico Schiraldi. To showcase the culinary essence of the grigliata, the dishes are based on its classic recipes, with flavours made lighter and more refreshing and presented in a refined contemporary style using handcrafted Mediterranean-style tableware.
Griglia serves antipasti, artisanal salumi, main courses, sides, cheeses and desserts, and carries an extensive range of more than 100 wines from different regions, with up to 85% from Italy. Cocktails focus on different flavours of Negroni, Spritz and Gin & Tonic. Traditional Italian digestives, such as limoncello, amaro and grappa are also served.

Pizza Fabbrica is an authentic Italian wood-fired pizzeria and bar located in vibrant Kampong Glam. They serve up traditional recipes in a modern setting.
Their pizzas are done Neapolitan style, they are fired in the wood fire oven (burning at around 450-500 degrees celcius) for no more than 90 seconds, giving the crust that authentic “leopard spotted” char and the smoky-ness.
All their pizzas are hand stretched, and thus are thin in the center with a crust that is crisp on the outside whilst being fluffily soft inside. They top their pizza with raw San Marzano tomato sauce and fresh mozzarella. The focus is well balanced crust, toppings and quality of ingredients.
These traits are typical of a Neapolitan pizza. Taste it at Pizza Fabbrica.

Over the past eight months, Singapore’s foremost gluten-free bistro The Butcher’s Wife has played host to Drunken Farmer, a travelling natural wine bar and consultancy belonging to the same Spa Esprit Group portfolio of F&B brands. Guided by Drunken Farmer’s natural wine expert Eduardo Bayo, The Butcher’s Wife then revamped their wine programme to focus solely on wines that are organic, biodynamic, natural, and sustainable. Since making the switch to champion a 100 per cent gluten-free lifestyle in 2017, this natural wine programme compliments one of the most exciting chapters the Tiong Bahru backstreet bistro will soon embark on: a shockingly simple approach to gluten-free dining by new Brazilian head chef Mariana Campos that favours all manner of funk, is great for the gut and delicious to the very end.
To cater to diners and regulars who cannot get enough of these natural wine offerings and a pandemic that’s changing the way we eat and drink, The Butcher’s Wife has launched Singapore’s very first brick and mortar natural wine retail space. Curated by Drunken Farmer, retail offerings include popular labels that diners have discovered while dining at The Butcher’s Wife, including its monthly 5 Bites 5 Wines event organised in collaboration with Drunken Farmer and many more surprises, at to-go prices.
Following the kick-off of the natural wine retail format at The Butcher’s Wife, the retail to-go concept might be replicated to cater for the neighbourhoods the other SEG F&B outlets are located in, so wine lovers can rejoice in the fact that a bottle of natural wine is always in close reach.

Pandora’s Garden, a newly-opened rooftop garden bar located at the courtyard of Ann Siang House is dedicated to serving rosé wines. Housing the most comprehensive collection of rosé wines in Singapore, it hopes to precipitate the rising popularity of this sophisticated yet often misunderstood pink style of wine.
Drinking pink has never been so trendy till recently. According to research company Nielsen on wine trends of 2018, consumers are adding rosé to their wine carts as an addition to other wine varieties. With increased production from France, Spain, Italy and the US, there’s never been a better time to try this exciting and tantalising wine.
Contrary to popular belief, rosé is NOT made blending red and white wine. There are several ways in which rose is made and that is not one of them. The most common rosé production method is the maceration of red grape varieties, skin still intact for between 12-24 hours to achieve the blush colour it is known for.
Rosé rules at Pandora’s Garden. Jamie and Jasmine Gripton, husband and wife team owners of Pandora’s Garden and also Brightside on Duxton Hill, has procured a sizeable collection of rosé wines that include Whispering Angel’s L’Esclans Gamus (SGD$535/bottle) named “The Greatest Rosé” ever by James Suckling, one of the world’s most influential wine critic. Ultra rare rosé champagnes such as Louis Roederer Cristal Rosé and 2007 Krug Rosé are available at $1,888 and $888 respectively. A regular glass of rosé starts at $12 per glass or $41 per bottle, magnum (1.5L) and jeroboam (3L) sized formats are also available at an affordable price.
Pandora’s Garden is a hidden gem designed around an ancient Frangipani tree with roots that run deep under Ann Siang House. When night falls, a retractable roof opens up like a box and twinkling fairy lights are turned on to create a magical effect that inspired the name Pandora’s Garden.
Whilst rosé is its main offering with over 35 different selections, specially brewed Pandora’s Craft Ale, in partnership with local brewing company Trouble Brewing, is available on tap and freshly made goblets of Tanqueray botanical gin cocktail offer a spirits alternative. Bar snacks at Pandora’s Garden are specially made to pair well with the drink offerings, expect picnic style food such as cured meats, premium cheeses, British pork pies, homemade Jägermeister paté and a Ploughman’s board, served with artisanal bread, crackers, chutney, fruit and nuts.
Look out for the weekly Blush Ladies Night on Wednesdays in which Bach Rosé, Anna Sparkling Rosé, Aperol Spritz, Pimms and Sangria flow freely for $30+ from 6pm-8pm.

SPRMRKT started with a simple goal: to inspire daily life. It’s what we’ve been doing since 2012, and with our newest members of the family at the Singapore Tyler Print Institute (STPI) — SPRMRKT Daily and SPRMRKT Kitchen & Bar — we continue to believe in the everyday made different.
The original McCallum Street branch brings together food, retail, and art, showcasing some of the finest produce and products in a cosy oasis in the heart of the central business district. Here, diners were first introduced to the supermarket experience, redefined.
SPRMRKT Daily at STPI will press on in enriching this dining and shopping experience. Incorporating a grocery-style shop into a riverside café, Daily hopes to become the go-to place in the Robertson Quay area whenever you’re on the hunt for your mealtime favourites, some handcrafted products, or just fresh, carefully-sourced ingredients.
Also at STPI, SPRMRKT Kitchen & Bar is a place to tantalise, tease, and tempt those tastebuds. Kitchen & Bar is SPRMRKT’s first foray into a more all-rounded dining experience, presenting food of the quality of a fine-dining establishment but in an unpretentious, welcoming space that carries the familiarity of SPRMRKT’s outlets. 75CL.sg, Singapore’s leading e-commerce destination for wines and spirits, has launched Singapore’s largest wine tasting lab. Designed to fulfil the customer’s tasting needs, 75CL’s tasting lab provides a platform for customers to taste wines before purchasing them online. Resembling a Western vineyard’s elegant tasting room, it features over 56 international wines for tasting, including labels from France, Italy and Spain.
From $3 per tasting portion, walk-in-customers can taste premium wines – valued between $80 - $100 per bottle – from key regions like Bordeaux, Burgundy and more. Featured Bordeaux wineries include 2nd Growth Chateau Gruaud-Larose, and 3rd Growth Chateau Cantenac-Brown, from St-Julien and Margaux respectively.
As customers get a taste of different wine regions from around the world, a 75CL consultant will be on hand to guide them through a casual tasting session. All are welcome here, from the social drinker to the serious wine enthusiast.
75CL’s wine tasting lab was founded with one ambition – to factor in the wine tasting experience; an important component of wine buying. Wine, as we all know, is subjective. A customer has to depend on the recommendations of friends or experts if he wants to buy a wine label which he has never tasted before. As each individual has his own personal taste preferences. One’s taste buds may not always agree with the recommendations of others.

From the vibrant nightlife of Gemmill Lane comes a drinking hole, created for the sole purpose of giving everyone - and anyone - a place to quench parched throats with accessibly-priced drinks.
Welcome to Gemmills - a new all-day dining concept by the people behind Maggie Joan’s and Moosehead.
Inspired by its namesake John Gemmill - a successful auctioneer and banker in the 1840s. John donated the Gemmill Fountain, Singapore’s first public drinking fountain, and in doing so created a drinking place for all of Singapore’s inhabitants.
John’s vision to provide a readily available place to quench thirst lives on in Gemmills. Hidden in a back alley beside sister restaurant Maggie Joan’s, Gemmils is a comfortable and cosy bar, perfect to make yourself feel at home with a glass of wine in hand.
Open from 8am ‘til midnight, Monday to Saturday, Gemmills is a licensed bottle shop, offering a selection of sparkling, white and red wine from around the world along with craft beers, for either dine in or takeaway. Be spoilt by John’s Choice – a regular rotation of wine by the glass.
Apart from drinks, Gemmills aims to satiate ravishing stomachs with its daily rotations of sandwiches and tarts. It is a place to pop by, grab a coffee and breakfast or lunch, or a place to relax with drinks and snacks. By the open counter-top, find a curation of artisan cheeses, charcuterie and a range of small bites such as spiced nuts, marinated olives and duck rillettes.
There's a new addition at the Oxwell & Co. family - this intimate rooftop bar on the fourth floor, which has with a panoramic view of the CBD.
The small yet cozy space here has an ultra laidback, Anglo-themed vibe with simple, rustic-looking furniture, a refurbished London telephone booth and an urban herb garden located right next to the space. The menu's designed exclusively with Hendrick’s Gin, featuring a namesake cocktail menu comprising botanical elements from the herb garden. They're still tweaking the cocktail menu at the moment, but you can expect solid gin and tonic offerings like Bathtime, a refreshing cucumber and thyme punch bowl concoction or the Clover Club Street, a rich, flavorful botanical cocktail.
