The Department’s regularly changing menu of twisted classics, wicked salads, succulent sandwiches, small-batch cakes and tempting pastries is a celebration of bold, inventive and occasionally unconventional flavours.
Whether you need a perk-up or a mid-morning jolt, some time out or a good catch-up; a small bite or a square meal, this is the new perfect venue for you.
It all began in 1862, when Louis Ernest Ladurée, a miller from France’s southwest, created a bakery in Paris at 16 rue Royale. The beginning of this century found Paris wrapped up in a frenzy of distraction and going out in public. Louis Ernest Ladurée’s wife, Jeanne Souchard, had the idea of mixing styles: The Parisian café and pastry shop gave birth to one of the first tea salons in town.
The story of the Ladurée Macaroon starts in the middle of the 20th century with Pierre Desfontaines, who first thought of taking two macaroon shells and joining them with a delicious ganache filling.
These small, round cakes, crisp on the outside, smooth and soft in the middle, are made every morning in Ladurée’s “laboratory”. The pastry chefs measure out very precisely the required amounts of almonds, eggs and sugar, before adding one final ingredient, a pinch of unique “know-how”, essential to the making of such a delicacy. Once cooked and filled, the macarons are put to one side for 2 days before going on sale, the time it takes to achieve a perfect balance between texture and flavour.
With each new season, Ladurée pays tribute to its most famous creation by creating a new flavour. Their existing range of macarons is always the starting point when a new one is created, as the variety of colours is as important as the range of flavours and a vital part of their appeal.
The first level counter only carries macarons, but they also serve chocolates, jams, tea and other confectionery.

A drip of this and a little of that...
Alfred Chan – the heart and hands behind Drips Bakery Café - touted as a gourmet pastry chef of the Heartlands, Alfred Chan has a sweet deal going for him.
Alfred opened his charming little shop in Commonwealth two years ago, selling scrumptious tarts and cakes of unique flavours. Although he spent his professional years behind baking counters at the Shangri-la Hotel and other famous academies, he liked the laid back charm of a heartlands neighbourhood and particularly its friendly patrons who visit him at his shop. Alfred soaks up this lively environment and thrives in it and the steady stream of customers is evident of its success.
Some customers have even become his friends and shared their own recipes with him, encouraging him to innovate, improve and create new flavours and ideas. Some simply want to spend time trying new cakes or pastries which Alfred whips up every so often. The current shop comfortably accommodates the retail business, but it gets harder to seat and serve his lingering patrons. So as a result of its growing popularity, Alfred decided to set up a bakery café, where customers can comfortably sample his fare.
Alfred wants to be able to share his cakes and desserts with a wider appreciative audience. He enjoys getting feedback and trying new things. In the newly opened shop, the menu offering is extensive and customers will feel spoilt for choice. From cakes, tarts, cookies, freshly baked breads and sandwiches, it’s a one-stop shop for people who like a good dessert on its own, or with their meals.
They don’t want to offer just one type of food – food should be enjoyed as complementary dishes to one another. People should not feel that they have to settle for just one type of dessert – there are many choices here, so do your best to try as many of possible.
This is the Marmalade Pantry's second outlet and as expected it has a rather familiar feel to it - similar to the flagship at ION Orchard with bright and airy spaces and soft yellow lighting but with the difference that it's not cooped up in an airconditioned shopping mall.
Tucked away at the Bukit Timah Saddle Club, it's taken over the space of the old Mimolette, which was more recently Mimo Kitchen & Bar and thre vibe is full on alfresco chic, jungle aura and colonial shindig all rolled into one.
The menu looks mouth-watering, as do all things related to The Marmalade Group and they offer brunch on weekends which is a big plus, if you're looking for a leisurely all-day gourmet experience out of the hustle and bustle of the city, with plenty of fresh air and scenic outdoor space thrown in for good measure.
Brunetti brings together a luscious array of everything we treasure in Italian cooking, in an enticing café space – a Gelateria, Cioccolateria, Pasticceria and more. Famed for its mouth-watering cakes, freshly baked breads, delightfully sinful chocolates and flavourful gelatos, Brunetti satisfies every Italian craving.
Brunetti Cakes began trading at the Faraday street location in 1985. The Angelé family acquired the business in 1991 and transformed the lovely café that it was into a truly authentic roman Pasticceria.
The Angelé family comes equipped with a wealth of knowledge and experience in Pastry and Cafés. The founder, Mr Giorgio Angelé began his training in Rome at the ripe age of 10. In 1956, at the age 23, Giorgio came to Australia with the Italian Olympic team as a pastry chef. After working for a few years, Giorgio was then given the opportunity to migrate to Australia permanently.
Since then Giorgio has always been involved in the pastry industry and you can still find him at Brunetti baking a delicious selection of European style sweets and desserts.
Over the years, Brunetti in Carlton has become one of Melbourne's most iconic places to visit to indulge in a delicious Italian style coffee from the Bar, cake from the Pasticceria, gelato or tempting savoury from the Paninoteca.
The arrival of this famed brand in Singapore has us all licking our lips in anticipation!
Smiths have opened their 2nd store at Balmoral Plaza and wanted to share a little fish and chips trivia with you. So here goes....
Did you know that fish and chips are 100% natural with no added colouring or preservatives. They contain less fat and calories than burgers, kormas or pizzas plus they’re an excellent source of high quality protein, carbohydrates, vitamins, iron, calcium and dietary fibre. White fish is also an essential part of a healthy diet.
Tests by the Seafish Industry Authority show fish and chips contain approximately 170 Calories and 9g of fat per 100g. That means our average fish (170g) is approximately 300 calories and 16g of fat and our average chip portion (300g) is approximately 500 calories and 27g of fat.
There are around 10,000 fish and chip shops all over the UK, selling 276 million portions of fish and chips each year.
As far back as 1838 Charles Dickens wrote about fried fish warehouses in the classic novel 'Oliver Twist'. These warehouses acted as the forerunner to fish and chip shops – but the partner to fish wasn't the traditional chip as we see today, but either bread or baked potatoes. The fish was sold by street vendors who carried the goods in trays hung around their necks. The fish was purchased cold for about a penny a portion.
Fish and chips was the only take-away food not to be rationed during the Second World War. Frederick Lord Woolton, Minister of Food at the time, even allowed mobile frying vans to carry fish and chips to evacuees around the country.
The first fish and chip shop is thought to have been opened in Mossley, near Oldham, in 1863, although there are claims for one in London that opened in 1860.
The world’s biggest ever portion of fish and chips was cooked in Hull during Seafood Week, October 2002. The fillet, which measured 34 in long and 14 in wide, weighed 28 pounds and 1 ounce, beating the previous world record by two pounds.
On a Friday in the UK, 20% of meals purchased outside the home are from a fish and chip shop.
In order to produce the best quality fish and chips at Smiths they only buy the best quality supplies. All of their products are of the highest quality and they spend every morning preparing everything fresh for the day.

Flor Patisserie is a Japanese-styled patisserie serving authentic Japanese inspired French pastry, where you can choose to dine in or to take out.
They take pride in using only the freshest and best quality ingredients in their pastries that have been sourced from overseas (Japan, Belgium, and France), and locally. Add to that, their chef from Japan brings with him over 20 years of Japanese baking techniques, and has spent a year and a half tailoring their signature cakes to suit the climate and taste of Singapore.
They do not use baking powder, artificial rising/softening agent, stabiliser, or preservatives in their products. The soft yet moist quality of their cakes is achieved from the natural aeration of eggs being whipped to their full peak.
Being made entirely of natural and fresh ingredients, it is no surprise that their pastries do not keep well. And because they want their customers to be able to enjoy freshly baked cakes every day, all unsold fresh cream cakes are either sold at a discount at the end of the day, or are disposed of.
If they won't eat it, they won't serve it - Flor Patisserie firmly believes in using only the best ingredients to create beautiful-tasting pastries. And their chef ensures that all pastries that come out of the kitchen are at the peak of harmony in flavours as well as in colours.
So come and partake in a bit of happiness from their garden of sweet pleasures. See you soon at Flor!
Strictly Pancakes is the result of the Pancake Pact between owners Joanne Chuah and Eunice Leow, and stems from their days spent working the service floor part-time while pursuing their undergraduate educations.
From their days behind the counter, scooping ice-cream and interacting with customers in a small yet popular ice-cream parlour, Joanne and Eunice built up excellent rapport, and a firm friendship that blossomed over time. The experiences at the parlour unearthed their previously closeted passions for providing quality service and the desire for creating great tasting food for patroms to enjoy in a relaxed atmosphere. Since then, the two have always envisioned opening their own cafe, serving their favourite dish, Pancakes. Thus, the Pancake Pact was made.
So, a year into the Pancake Pact, Joanne and Eunice decided to take the plunge and realise the dream from January 2010 and have never looked back since. Countless hours in the kitchen experimenting and even more spent planning have finally come to fruition in
Strictly Pancakes, where Joanne and Eunice showcase the best of their passions and talent for your enjoyment. Apart from offering Traditional Stacks of Pancakes in Authentic Maple Syrup and Five different types of Butters, they also serve our Pancakes as Savouries and Sweets. Savoury Pancakes feature their Medium stacks served along with a range of meat, poultry and seafood items. Their Sweets are served with a whole range of sin to be a diet's bane. Fresh fruits, cream, ice-cream and caramelised goodness are all packed into an exciting range of sweet treats which are, despite traditional caution, perfect any time of day.
Do visit them and partake in the story of the Pancake Pact, where your satisfaction fuels their ambition. Love now has a new shape.
