It is owned by American Chef Ryan Jetté, who was formerly the Executive Sous Chef of the Sentosa Resort and prior to that has also worked at top American establishments as the Chef de Cuisine of Farm at the Carneros Inn in Napa, California as well as under Thomas Keller at The French Laundry.
The décor of the room is designed with New York’s Meatpacking District in mind. Materials such as rustic bricks and steel are used to create that industrial chic look. The restaurant seats 36 and in line with the concept of Communal being an American diner, the counter takes centerstage with a long 16 seater bar facing an open kitchen. There are also four cozy booths along the bar counter for customers who prefer a more private dining option.
On the menu, Chef Ryan presents his take on classic American diner comfort foods, as well as his own culinary creations. Some of the items that are featured on the menu are the classic All-American Beef Cheeseburger, Fried Chicken with Crushed Laratte Potatoes, as well as Lobster Mac and Cheese. The Maison Goyard, founded in 1792, in Paris by Francois Goyard, is known to be the oldest and most prestigious trunk maker. It has been passed down from generation to generation up until today under the successive names of Martin, Morel and finally Goyard.
From being the favorite luggage maker of prestigious aristocratic families, Goyard moved towards being an international brand with an impressive reputation amongst its high profile clientele which adopted the famous painting canvas in the motives of chevrons.
This coated cloth was around for the World Exposition in 1900, and was used in the inter-war years. It remains unchanged up to the present time, in its chevron pattern. A century after its creation, Goyard introduced twelve new colours on top of the historic black canvas. The Goyardine canvas is now available in red, green, sky-blue, navy-blue, yellow, white.
Right from the start, Goyardine was made with cloth, although its appearance is very similar to leather. Goyard uses three plant fibres: "hemp", linen and cotton. Hemp is particularly sought after for its hydrophobic qualities, linen is a fine thermal regulator, and its softness probably caught the attention of the trunk maker.
The brand’s monograms are hand-painted onto the Goyardine canvas. The revival of customized leather goods, whether they are adorned with initials, stripes or coats of arms, proved Goyard’s answer to the logo craze.
