They fill the niche between the Fine-Dining Italian restaurants and the typical localized fast-food chain Italian outlets. They are able to connect with artisan pasta makers from small villages in Italy. These pasta makers are long time family-run businesses dating back to the 19th century, keeping intact the traditional way of making pasta.
These artisans use the purest spring water and locally harvested grains, they employ the slow drying method to dry the pasta inside a small chamber for 40 hours (unlike industrial pasta which only takes 2 hours to dry), thus retaining the full flavor of the grain. This is then combined with the shaping method of the pasta using ancient tools such as the bronze thread, allowing the pasta to retain its natural rough texture.
The end result is that when the pasta is mixed with the sauce, you can literally see these two ingredients blending perfectly in a balanced harmony of taste.

Run by The Mangiatutto Group of Restaurants, who brought you Cugini Trattoria, just a few steps away and Solepomodoro in quaint Mount Sophia, this Taberna aims to bring to Singapore the real, traditional, genuine flavors of the Spanish cuisine.
Drawing on the experience of the owners in the region around Valencia, with a team of Catalan and Valencian professionals in the kitchen, Los Primos serves an array of more than 30 inviting traditional tapas. Some of the Classics to be mentioned: Patatas Bravas (roasted potatoes with a mildly spicy tomato sauce), Croquetas (deep-fried croquettes filled with either mixed seafood blend, ham or minced chicken), Gambas al Ajillo (sizzling prawns with fresh roasted garlic), Pulpo a la Gallega (think slices of octopus, fresh potatoes, extra virgin olive oil and a dash of paprika), Selection of Spanish cold cuts like Iberico, Serrano ham, Chorizo and Lomo (cured pork). The wine list spans good labels from Spain, Italy, Chile and Argentina. Most bottles are imported directly by the owners, offering wines usually not available in Singapore. Sangria is made with Spanish Bobal red wine, Cointreau, Vermouth, Brandy and lots of zesty fruit, served in traditional clay-pot jugs.
Los Primos not only has a great Spanish food menu, but also an extensive selection of beverages. Behind the long, hand-crafted bar counter, adorned with original Iberian tiles, two expert mixologists prepare cocktails and shots to perfection, ensuring all tastes for drinks can be satisfied.
The restaurant is decorated with furniture and ornaments imported on purpose from Valencia, giving the whole place a warm, cozy, and at the same time, lively feel. The walls are scattered with prints and paintings of many aspects of Spanish life. Then we went to Piedmont on a two-week trip. There, we met ‘trifolai’ — truffle hunters — and spent a night with them and their dogs, searching for the ‘golden mushroom’. We also enjoyed making bids at the truffle auction. During the trip, we made very good and important contacts with the local suppliers. We also visited many wineries in search of the authentic taste of Piedmont wine, without the high prices of the most known Barolo and Barbaresco. All these years of working in F&B had given me the chance to be acquainted with numerous passionate wine-makers, and it was wonderful to introduce Tammy to them. We had a good time eating and drinking together with them whilst talking about our common passions: food and wine, naturally.
A few months later, we decided to take a big leap of faith and put our hearts and souls into the conceptualisation of our shared dream: Casa Tartufo. With Casa Tartufo, we aim to be the reference for truffles in Southeast Asia, trading the finest ingredients from Italy, France and the rest of the world, in order to give our guests the best products at the best prices all year round. Born in Marsala, Italy, which is famous for the sweet wines named after the city, Alex has always been passionate about food and wine. His interest naturally led him into the F&B industry, kick-starting a 20-year career that has taken him all over the world. Alex is a professional sommelier and holds a Master’s degree in hospitality management from Cornell University. He was also a finalist for the Best Restaurant Manager and Sommelier at the 2009 World Gourmet Summit.
Today, armed with his extensive F&B experience, passion, drive and enthusiasm, as the owner of Casa Tartufo, Alex will oversee the restaurant’s operations, leading a dedicated team of chefs and waiters to display the highest level of professionalism, and deliver the best possible food and service to his guests. Alex’s life and business partner, Tammy Boh, is a banker-turned-restaurateur. She takes care of the finances and marketing whilst assisting in the daily operations.
